Grade a Raisins: Grapes can be used in two ways: fresh grapes and dried grapes. Grapes are dried by light and the heat of the sun and are turned into dried fruit called raisin.

Raisins are good for bone health, because of their high calcium content and they prevent osteoporosis.

Just as grapes have different types, this dried fruit also has many types.

Different types of dried grapes include

  3. Tifi
  4. Yellow
  5. Slim green

Types of raisins and methods of their preparation

Aftabi raisins

In this method, raisins are prepared without using chemicals. Raisins prepared in this method are dark brown and slightly dry. The time required for the dried grapes, depending on the type of grapes and weather conditions, is 10-15 days. After drying the upper part of the grapes that are exposed to the sun and turning over the clusters we try to dry the lower parts. Adequate drying of the grapes separates the dried grapes from the grape cluster wood. In areas where fall season is early in some years, early rains damage drying cubes. To prevent rain damage, plastic tents are spread on the clusters.

Tizabi raisins

These raisins are known as Sabzeh. They are obtained by using acid solution. In this method the dry period is short and the coarseness of the grapes is maintained during drying. The color of the prepared raisins is greenish, yellow and they are soft. First, clusters are arranged in the basket and then immersed in the prepared solution for a minute. Then they are placed in containers to be drained and next are transferred to another room. But the clusters should not be stacked. In order to dry the berries evenly by turning the clusters, they try to dry the lower part of the grapes.

In this method, the drying time is 5-8 days. One day before picking the clusters, they prepare a sharp water solution. For this purpose, 5 kg of commercial powder of potassium carbonate and 2 liters of green oil is added in 100 liters of semi-hot water and then the solution is stirred. The obtained solution, which has a milky color, is enough for 2500 kg of grapes. When drying the grapes, if the weather is cloudy and the sunlight is weak, and also if the clusters contain large grapes, then they will increase the amount of potassium carbonate and vegetable oil in the solution in the same proportion. Potassium carbonate causes fine grooves on the surface of the bean and rapid evaporation of water vapor and also causes yellowing. Sabzeh oil also softens raisins.

Grade A Raisins

Raisins in the shade of the sun

In this method, the arranged clusters are dried inside the indoor halls. For this purpose the clusters are hung from the ceiling with thread. In this type of hall, the air flow should be sufficient and the grapes should be in dry in 50-60 days. Prepared raisins are green. In this method, there is no risk of rain and rotting and the obtained raisins are clean and free of waste materials. But this method is not cost-effective and needs suitable halls.

Golden raisins

Golden raisins or sulfur raisins are common in European and American countries. In this way because of use of alkali solution and sulfur smoke the obtained raisins turn into golden yellow. Of course, today it has been proven that alkaline solution is harmful to human health and the use of this method is obsolete. In this method first the clusters are picked and placed in a basket. Then, they are immersed in alkali solution for 2-3 seconds. After that, the clusters are washed with cold water.
