Pistachio is a fruit that plays an important role in the nutrition and economy of arid and semi-arid countries. This plant has different species due to its appearance, the fruit size is desirable for consumers and Pistacia vera L is one of the species. Most pistachio trees grow at an altitude of 900-2000 m from sea level and belong to Anacardiaceae. Pistachio cultivation is done in a latitude of 42-27 degrees north. Pistachio has a temperature tolerance of minus 20 degrees Celsius in winter and 45 degrees Celsius in summer. Pistachio has two legs and requires both male and female trees to produce fruit. The most important pistachio cultivars in Iran are: Ouhadi, Koleghoochi, Akbari, Ahmad Aghaei, Mumtaz, Badami Zarand, Shahpasand, Sefid Pesteh Nogh, Khanjari Damghan and Qazvini.

In Iran, pistachio, especially Ahmad Aghaei, is found in different regions, but Rafsanjan in Kerman, also known as the city of green gold, are famous and have a special position in the field of pistachios. Kerman province is the best place for pistachio cultivation due to specific geographic location and altitude and distance from sea level. Due to the mentioned factors, Kerman has a world famous pistachio with a delicious taste and makes Iran the center of pistachio. In Iran, Ahmad Aghaei and Akbari pistachio are of special importance, which is why they receive so much attention. In fact, it is because of their wonderful taste and very beautiful and splendid appearance that makes Iranians eat Ahmad Aghaei pistachios in all their important celebrations, including Nowruz and religious holidays.

This cultivar has expanded greatly in the last few years due to its relatively large almond-shaped fruits and white bony skin. The most important reason that people buy this pistachio is its bony white skin.

Ahmad Aghaei cultivar has the highest percentage of smiling pistachios and more than 98% of its fruits are smiling. Its leaves are small and about 60% of the leaves are of the three-leaf compound type. The apical leaflet in this type of cultivar is ovoid and larger than lateral leaflets. This cultivar has a medium growth and very strong apical dominance. The fruits in this type of cultivar are almond shaped. Pistachio density in this cultivar is moderate in clusters with about 18 pistachio seeds at the end of the season.
